MeeBaa S01-Series: The Science of Thermal Stability in Manual Espresso

In manual espresso, the user is the engine, but the machine must be the perfect thermal reservoir. When brewing specialty light roasts, even a small drop in temperature can lead to "sour" or "hollow" extractions.

Today, we are releasing the full technical performance profile of the MeeBaa S01A and S01B-9BAR. This data proves that our 304 Stainless Steel architecture delivers professional-grade consistency that rivals much larger, more expensive machines.


1. The Verified Thermal Profile

Our testing, conducted with a precision internal needle thermometer, reveals a highly stable linear cooling curve.

  • Starting Temperature: 92.6°C (via Double-Rinse Protocol)

  • Linear Cooling Rate: -0.047°C per second

  • 40-Second Finish Temp: 90.6°C

  • Total Variance (Δ): Only 2.0°C over a full extraction window.

    Thermal Stability Test in Video 

    The Setup: Device: S01A-9BAR (100mm Upper Cup Height). 
    Environment: 24.0°C Room Temp. 
    Goal: Verify the temperature drop over a 40-second window. 
     

    The Process: To reach the target brew temperature of 92.6°C, a double-preheat method is used: Rinse 1: 99°C water flash-heats the 304 Stainless Steel (Cup reaches ~63°C). 
    Rinse 2: 99°C water brings the thermal mass to equilibrium (Cup reaches ~89.5°C). 
     

    Test Run: Final pour of 99°C water results in a stable internal starting temp of 92.6°C.

    10s: 92.1°C 
    20s: 91.8°C 
    30s: 91.3°C 
    40s: 90.6°C 
     

    Total Temperature Variance: -2.0°C over 40 seconds. 


2. Why "Linear Stability" Matters for Flavor

Most manual brewers suffer from a "thermal crash"—a rapid drop the moment water hits the metal. This results in an uneven extraction where the beginning of your shot is sweet, but the end is sour.

Because the MeeBaa S01-Series maintains a slow, linear decline of just -0.047°C/s, your coffee bed stays in the "High-Extraction Zone" (above 90°C) for the entire 30–35 second piston stroke. This ensures a balanced, full-bodied espresso with a clear flavor profile.

How does the MeeBaa S01-Series compare to other popular manual makers?

  • MeeBaa S01B-9BAR (Verified): Features a 2.0°C total drop. Specifically engineered for users who want documented, thermal stability. 

  • Flair Pro 2: A high-mass industry favorite. While capable of great shots, it requires more intensive preheating (steam or multiple baths) to match the S01’s internal stability.

  • Cafelat Robot: Excellent workflow, but often operates at lower passive temperatures (~88°C) unless the basket is aggressively preheated.

  • 9Barista MK.2: Extremely stable due to its jet-boiler design, but offers the user less control over the specific temperature "profile" compared to the S01.

  • Flair Classic: An excellent entry-level machine, though it experiences a faster thermal drop due to its lower-mass aluminum construction.


4. Technical Specifications

  • Target Pressure: 9 Bar (1 bar ~3kg force, 9 bar requires ~29kg downward force)

  • S01A vs. S01B: Both share the same internal "Thermal DNA." The S01A offers a theoretical 0.01°C advantage due to a slightly larger upper water jacket, but extraction results are identical.


5. The Impact on Flavor: Why Stability Matters

Note: Thermal stability is critical data for flavor extraction in espresso. In most manual espresso makers, the water temperature "crashes" as soon as it touches the portafilter or the coffee puck. This causes the extraction to stall, leading to under-extracted, sour, or "thin" tasting coffee.
